The oldest of the cities and Morocco's cultural and religious centre, Fès (or Fez) enjoys an enviable position as the symbolic heartbeat of the country. It gives a wonderful insight into local artistic skills - and many of the local products can be purchased at the Fès el-Bali souks. Local cuisine dates back to the 13th century and is Arabo-Andalusian influenced. The best-known local dish is pastilla; a light puffy pastry filled with minced pigeon, almonds and sugar.
